The key to neatballs is the "glue"—what makes a wonderfully flavored mixture stick together. We have found that moist ingredients, such as mashed potatoes, cooked brown rice or sticky, glutinous rice (found in Asian markets), cooked cereal (such as cream of rice), and cooked whole wheat, help to hold together dry ingredients, such as cooked, chopped beans or chopped veggies.
